Homemade fresh pasta

Ingredients
- 2 cup Italian “00” flour all-purpose flour will also do the job
- 2 whole eggs large eggs
- 4 yolks eggs large eggs
- 1 tsp salt kosher
- 1 tsp olive oil extra virgin
Instructions
- Pour the flour onto a clean work surface and use your fingers to make a well in the center.
- Add the eggs, salt, and olive oil into well.
- Gently begin to mix with a fork, gradually drawing in flour to bring all the ingredients together into a firm dough.
- Knead the pasta dough for about 10 minutes or until dough develops a smooth and malleable texture. If you think the dough is too wet, add a pinch of flour and If the dough feels a bit dry, feel free to add 1/2 tsp of water.
- Wrap the dough tightly in plastic wrap, and let it rest at room temperature for 30-45 minutes.
- Unwrap the dough and cut in half.
- On a lightly floured surface roll it out as thin as possible. Pasta will get thicker with the water.
- Fold the dough and cut the pasta into the desired size.
- Divide the cut noodles into individual portions, curl into a nest, and let dry for an hour.
- Bring a large saucepan of salted water to a boil then throw the pasta in. Stir right after you add it to the water as pasta can stick. Drain, toss with the rest of the recipe, and enjoy!
