- 1 fillet fresh cod
- 1 tbsp olive oil
- ½ red bell pepper sliced
- ½ green bell pepper sliced
- ½ yellow bell pepper sliced
- ½ orange bell pepper sliced
- 1 onion sliced
- 1 tomato chopped
- salt and pepper to taste
Pat dry the fillet with paper towel to absorb the excess water
Turn your griddle on Hi. The cooking surface should be really hot before throwing the cod on.
Cook for 5 minutes, on one side, then, 5 other minutes on the other side.
Just before turning the cod over, throw the veggies on the griddle except for the tomatoes.
Stir in and cook for about 5 minutes until the veggies are soft and translucid.
Season with salt and pepper to taste.
Garnish the cod with the cooked veggies and the fresh tomatoes.
