Cod & sauteed veggies on the griddle

Equipment

  • Cuisinart 360° XL Griddle Outdoor Cooking Station

Ingredients

  • 1 fillet fresh cod
  • 1 tbsp olive oil
  • ½ red bell pepper sliced
  • ½ green bell pepper sliced
  • ½ yellow bell pepper sliced
  • ½ orange bell pepper sliced
  • 1 onion sliced
  • 1 tomato chopped
  • salt and pepper to taste

Instructions

  • Pat dry the fillet with paper towel to absorb the excess water
  • Turn your griddle on Hi. The cooking surface should be really hot before throwing the cod on.
  • Cook for 5 minutes, on one side, then, 5 other minutes on the other side.
  • Just before turning the cod over, throw the veggies on the griddle except for the tomatoes.
  • Stir in and cook for about 5 minutes until the veggies are soft and translucid.
  • Season with salt and pepper to taste.
  • Garnish the cod with the cooked veggies and the fresh tomatoes.
