Equipment

  • Nomad portative grill
  • Kitchen twine

Ingredients

  • 2 rainbow trout gutted and cleaned
  • 2 tbsp salt
  • 1 tbsp pepper
  • 1 orange sliced
  • 1 lemon sliced
  • 2 cloves garlic minced
  • 1 small onion sliced
  • 2 sprig rosemary fresh
  • 2 sprig thyme fresh

Instructions

  • Prior to grilling, your trouts should be cleaned and gutted. I like grilling them in a whole, heads and tails on.
  • Prepare your charcoal or wood fire grill. For this recipe, I'm using maple wood.
  • We are grilling the fish over the direct fire so make sure your grill grates and well coated with oil.
  • While you grill is heating up, prepare the fish.
  • Season the trouts with salt and pepper.
  • Place the minced garlic inside the fish.
  • Place the slices of lemon and orange, about 2 slices of each should suffice.
  • Place some onion slices along with the lemons and oranges.
  • Place the sprig of rosemary and the sprig of thyme.
  • Tie up the rainbow trouts with some kitchen twine.
  • Cook until flesh flakes easily, about 5 minutes per side, flipping once.
  • Remove from the grill, cut the twine and serve.
