Smoked rainbow trout

- Nomad portative grill
- Kitchen twine
Ingredients
- 2 rainbow trout gutted and cleaned
- 2 tbsp salt
- 1 tbsp pepper
- 1 orange sliced
- 1 lemon sliced
- 2 cloves garlic minced
- 1 small onion sliced
- 2 sprig rosemary fresh
- 2 sprig thyme fresh
Instructions
- Prior to grilling, your trouts should be cleaned and gutted. I like grilling them in a whole, heads and tails on.
- Prepare your charcoal or wood fire grill. For this recipe, I'm using maple wood.
- We are grilling the fish over the direct fire so make sure your grill grates and well coated with oil.
- While you grill is heating up, prepare the fish.
- Season the trouts with salt and pepper.
- Place the minced garlic inside the fish.
- Place the slices of lemon and orange, about 2 slices of each should suffice.
- Place some onion slices along with the lemons and oranges.
- Place the sprig of rosemary and the sprig of thyme.
- Tie up the rainbow trouts with some kitchen twine.
- Cook until flesh flakes easily, about 5 minutes per side, flipping once.
- Remove from the grill, cut the twine and serve.
