Inspect closely the oysters, look out for chipped or opened ones.
With a cloth in one hand, hold firmly the oyster. With your other hand, use the oyster knife and carefully insert it in the hinge of the oyster. Gently twist the knife to separate the mussel that holds the shell closed.
Remove the oyster from the shell and place in a small container.
Prepare the marinade ingredients together
Pour the marinade over the oysters.
Close the container lid and refrigerate for 20 minutes.
Start your electric smoker at 200°F
Put the oysters back in their shell and place them on your smoker grates.
Smoke for about 2 hours
Serve with a splash of Worcestershire sauce and lemon juice.
