Smoked bagels

  • Pour the sugar and the yeast in ½ cup of warm water
  • Stir the mixture until homogeneous and let it rest for five minutes
  • In a large bowl, mix the flour and the salt
  • Make a well in the middle of the bowl and pour the yeast and sugar mixture in.
  • Add ⅓ cup of warm water and stir, adding the rest of the warm water as you stir until the dough is moist and firm. You may have to add more warm water to get to the desired texture.
  • Knead the dough for about 10 ninutes on a floured surface.
  • Coat the dough in a large bowl brushed with oil and place a damp towel on top.
  • Let the dough rest for 1 hour in a warm place. It should double in size.
  • Push the dough down and let it rest for another 10 minutes.
  • Divide the dough into 8 pieces and shape each one into small balls.
  • With your hand, push the dough into circular motion until you get a perect ball form.
  • Gently press your finger in the middle of each ball to form a ring and strech it until it forms the shape of bagel.
  • Place them on a oiled cooking sheet, cover with a damp towel and let it rest for 10 minutes.
  • Preheat your oven, grill or smoker at 450°F
  • Bring a large pot of water to a boil and reduce the heat.
  • Gently lay the bagels in the water and let it boil for about a minute, then, turn them over and boil for another minute.
  • Dip one side in your favorite topping as you take them out of the water and place them on an oiled baking sheet.
  • Bake for about 20-25 minutes or until golden brown.
