Shrimp & Corn, Garlic-Butter Rolls
Fresh summer rolls with nordic shrimps, corn and garlic butter on the grill
Equipment
- Cuisinart Twin Oaks Pellet & Gas Grill
- Griddle insert
- Any other gas grill or equipment can be used for this recipe. If using a gas grill with no griddle insert, you can use a cast iron pan to stir the veggies, and heat the buns on the grill.
Ingredients
- 5 tbsp butter
- 3 cloves garlic
- 300 g Nordic shrimps
- 1 cup corn kernels fresh
- ½ red bellpepper chopped
- 1 tbsp Cuisinart KC sweet seasonning
- 2 tbsp chives finely chopped
- 2 tbsp dill chopped
- 1 tsp salt
- 1 tsp pepper
- ½ lemons juiced
- 6 artisanal hot-dog buns
Instructions
- Put the griddle add-on on the grill grates.
- Fire-up your grill temperature at medium.
- Melt the butter.
- Add the shrimps and some Cuisinart KC Sweet seasonning.
- Stir and cook for 2-3 minutes.
- Remove the shrimps, leaving the juice that dripped off during cooking.
- Add the onion, the bellpepper, the corn and the salt on the griddle and stir for 3-4 minutes, until the veggies has soften.
- Add the shrimps back on the griddle and stir with the veggies, for about 2 minutes.
- When all cooked, set aside in a bowl. Leave the grill on at medium for next step.
- Still on the griddle add-on, melt the butter with the garlic.
- Quickly heat the buns, opened, inside faced down on the griddle.
- Fill the buns generously with the shrimps and veggies.
- Top with some dill and drip some more melted garlic butter.
- Serve and enjoy the freshness in every bites!
