Ingredients
- 4 cup fresh pasta
- 1 pounds sea scallops
- 4 cloves garlic finely chopped
- 4 tbsp butter
- 1/2 tbsp olive oil extra virgin
- 1/3 cup white wine dry
- 1 lemon zested and juiced
- 1 green onion finely chopped
- salt and pepper to taste
- 2 tbsp parmesan freshly grated
- 1 pinch basil fresh and finely chopped
Instructions
- Bring a large saucepot of salted water to a boil and add the fresh pasta.
- Cook until al dente; it should only take about 1-2 minutes. Drain the pasta and keep on your side while searing the scallops.
- Dry the scallops with a piece of paper towel and sprinkle both sides with salt and pepper.
- Melt the butter in a large skillet over medium heat and add the garlic then the scallops. Cook for about 2 minutes each side or until crispy golden. Remove the scallops and reserve.
- Add the wine to deglaze the skillet and then add the pasta and the olive oil.
- Stir all the ingredients together for 30 seconds and top the pasta with scallops, green onions, basil, parmesan cheese, and lemon juice. Enjoy!
