Say hi to this loaded Wood-Fired NACHO PIZZA!
Servings: 4
Equipment
- A Wood-Fired pizza oven, I highly recommend Authentic Pizza Ovens for the Top quality Ovens
- Wood logs
- Wooden pizza peel
- Round pizza peel
Ingredients
24hrs Pizza dough
- 1 1/2 cup water warm
- 1/4 tsp dried yeast instant
- 4 cup Italian 00 flour All-purpose or bread flour does the job too
- 2 tsp salt
Sauce (salsa)
- 1/4 red onion minced
- 1/2 cup black beans drained and rinsed
- 1/2 mangoes ripe and minced
- 1 tomatoes ripe Roma tomatoe and chopped
- 1 clove garlic minced
- 1/2 lemon juice freshly squeezed
- 1/2 lime juice freshly squeezed
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp olive oil extra virgin
- 1/4 cup cilantro fresh and chopped
Toppings
- 1 cup chicken Leftover chicken. Any meat does the work.
- 1 medium bag tortilla chips
- 2 cup cheese shredded mozzarella
- 1/2 red onion sliced
- 1 jalapeno fresh and sliced
- 1/2 tomatoes chopped
- 1 green onions chopped
- 1/2 avocado sliced
- 1/4 cup sour cream
Instructions
Dough
- Whisk yeast into the warm water and let stand for a few minutes.
- Mix salt with 2/3 of the flour and then combine with water and yeast. Mix well until the mixture comes together in a shaggy mass.
- Cover with a damp towel and allow to rest for 60 minutes.
- Remove the dough from the bowl, add the rest of the flour and knead manually for about 5 minutes. Feel free to use a mixer is it's easier.
- Oil your dought and put it in a covered bowl. Let the dough sit for 24hrs.
Sause (salsa)
- In a small bowl, toss all the ingredients together.
- Allow sitting for 30 minutes and then drain any excess of juice.
Build the pizza
- First of all, flour your hands and your work station.
- Stretch your dough into a circle and place on your Wooden peel.
- Brush the dough generously with a generous layer of salsa.
- Add the tortilla chips, onions, chicken, shredded mozzarella, sliced jalapeno.
Cook the pizza
- I am using a wood-fired oven by "The authentic pizza ovens" but if you are using another type of oven feel free to ski these steps.
- If you want to make the best pizza around, it's important to test the heat. My little trick here is to sprinkle a small amount of flour right on the section you want to cook the pizza. If the flour burns within a couple of seconds, the area is probably too hot. The flour should take about 8-10 seconds to turn brown and then you are ready to add the pizza.
- Now you'll have to turn the pizza. I like to use a round and metal peel to turn and pull it out. Cook until the base is golden and the toppings look good. The pizza should only take about 2 minutes to cook.
Enjoy
- Slice and finish it with fresh sliced avocados, green onions, and sour cream.
