Ingredients
24hrs Pizza dough
1 1/2cupwaterwarm
1/4tspdried yeastinstant
4cup Italian 00 flourAll-purpose or bread flour does the job too
2tspsalt
Sauce (salsa)
1/4red onionminced
1/2cupblack beansdrained and rinsed
1/2mangoesripe and minced
1tomatoesripe Roma tomatoe and chopped
1clovegarlicminced
1/2lemon juicefreshly squeezed
1/2lime juicefreshly squeezed
1/4tspsalt
1/4tsppepper
1tbspolive oilextra virgin
1/4cupcilantrofresh and chopped
Toppings
1cupchickenLeftover chicken. Any meat does the work.
1medium bagtortilla chips
2cupcheeseshredded mozzarella
1/2red onionsliced
1jalapenofresh and sliced
1/2tomatoeschopped
1green onionschopped
1/2avocadosliced
1/4cupsour cream
Instructions
Dough
Whisk yeast into the warm water and let stand for a few minutes.
Mix salt with 2/3 of the flour and then combine with water and yeast. Mix well until the mixture comes together in a shaggy mass.
Cover with a damp towel and allow to rest for 60 minutes.
Remove the dough from the bowl, add the rest of the flour and knead manually for about 5 minutes. Feel free to use a mixer is it's easier.
Oil your dought and put it in a covered bowl. Let the dough sit for 24hrs.
Sause (salsa)
In a small bowl, toss all the ingredients together.
Allow sitting for 30 minutes and then drain any excess of juice.
Build the pizza
First of all, flour your hands and your work station.
Stretch your dough into a circle and place on your Wooden peel.
Brush the dough generously with a generous layer of salsa.
Add the tortilla chips, onions, chicken, shredded mozzarella, sliced jalapeno.
Cook the pizza
I am using a wood-fired oven by "The authentic pizza ovens" but if you are using another type of oven feel free to ski these steps.
If you want to make the best pizza around, it's important to test the heat. My little trick here is to sprinkle a small amount of flour right on the section you want to cook the pizza. If the flour burns within a couple of seconds, the area is probably too hot. The flour should take about 8-10 seconds to turn brown and then you are ready to add the pizza.
Now you'll have to turn the pizza. I like to use a round and metal peel to turn and pull it out. Cook until the base is golden and the toppings look good. The pizza should only take about 2 minutes to cook.
