Egg Rolls Smoked & Fried

These Smoked and fried egg rolls are filled with meat and crunchy vegetables, all wrapped up and fried to crispy perfection. It makes the perfect make-ahead appetizer for any event! Cheers!

Smoked & Fried Egg Rolls

Ingredients
  

Egg rolls

  • 50 egg roll wrappers
  • vegetable oil for frying
  • 1 egg beaten

Filling

  • 1 pound ground beef lean
  • 1 pound ground pork
  • 2 tbsp olive oil
  • 2 tbsp sesame oil
  • 1 tsp smoked paprika
  • 6 cloves garlic minced
  • 1 tbsp ginger peeled fresh and minced
  • 1/2 cup maple syrup or brown sugar
  • 1/2 cup soy sauce
  • 3 carrots shredded
  • 1/2 green cabbage shredded
  • 1/2 purple cabbage shredded
  • 1 white onion thinly sliced
  • 1 green onion thinly sliced
  • black pepper to taste
  • salt to taste

Instructions
 

Filling

  • Set the temperature on your smoker/grill to 250˚F and allow it to preheat for 15 minutes. You can also do it on your oven but I like to smoke the filling.
  • Add the 2 tbsp of olive oil, the ground pork, beef, garlic, ginger and smoked paprika in a large skillet.
  • Place the skillet on your grill/smoker. If you do it on your stove, cook over medium-high heat.
  • Cook, breaking up the meat with a spatula until meat is browned and cooked through. 
  • Add all the vegetables, sesame oil, soy sauce, and maple syrup. Salt and pepper to taste.
  • Stir to mix well then remove from heat.
  • Drain the filling to remove the excess fat as much as you can.

Wrap

  • Put 2 tablespoons of filling on the center of each egg roll wrapper and spread the edge with beaten egg for sealing before folding. It's important to tightly roll the egg rolls until it’s completely sealed.
  • Then, repeat the process, until you’ve used all your filling.

Cook

  • Prepare a few paper towel sheets with a rack on top, for cooling and draining the egg rolls.
  • Pour about 2 inches of vegetable oil into a deep pan.
  • Heat the oil to 350˚F and fry in a batch of 5-6 egg rolls at a time, turning a few times, until golden and crispy. It should take around 5 minutes.
  • Repeat until you have cooked all the egg rolls.
  • Serve the egg rolls warm with whichever dipping sauce you prefer.
