Equipment

  • Charcoal grill - I used my portative nomad grill for this recipe
  • Cast iron skillet

Ingredients
  

  • 1 lb scallops
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • cup white wine
  • 1 cup heavy cream
  • 1 tbsp lemon juice
  • salt and pepper to taste
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Light up your charcoal briquettes in your chimney starter.
  • Pour the hot coals in your grill and close the lid for 5 minutes.
  • Place a skillet on your grill grates and melt the butter with the olive oil.
  • Sear the scallops for about 1.5 min each side.
  • Add the garlic, heavy cream, wine, lemon juice, salt and pepper.
  • Grill for another 5 minutes, closing the lid for a maximum smoky flavor.
  • Remove from the grill, garnish with fresh parsley and serve.
