Creamy garlic scallops
Seared and smoked scallops in a rich creamy garlic sauce
Equipment
- Charcoal grill - I used my portative nomad grill for this recipe
- Cast iron skillet
Ingredients
- 1 lb scallops
- 2 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic minced
- ⅓ cup white wine
- 1 cup heavy cream
- 1 tbsp lemon juice
- salt and pepper to taste
- 2 tbsp fresh parsley chopped
Instructions
- Light up your charcoal briquettes in your chimney starter.
- Pour the hot coals in your grill and close the lid for 5 minutes.
- Place a skillet on your grill grates and melt the butter with the olive oil.
- Sear the scallops for about 1.5 min each side.
- Add the garlic, heavy cream, wine, lemon juice, salt and pepper.
- Grill for another 5 minutes, closing the lid for a maximum smoky flavor.
- Remove from the grill, garnish with fresh parsley and serve.
