Cream cheese & proscuitto stuffed chicken breasts

Let’s improve the boring chicken and break the secret with me : cream cheese, prosciutto, dried tomatoes and basil.

Chicken breasts stuffed with prociutto, dried tomatoes cream cheese
Equipment
- Cuisinart Clermont Pellet Grill & Smoker
- Kitchen twine
- Saran wrap
- Meat mallet
Ingredients
- 4 chicken breasts
- 1 tbsp salt
- 1 tbsp pepper
- 1 tbsp garlic powder
- 1 cup cream cheese
- 8 slices proscuitto
- 1 cup dried tomatoes in oil
- 16 leaves basilic fresh
Instructions
- Slice open the chicken breasts, cutting with the knife parrallel to the cutting board. Stop cutting toward the end, to leave the breast attached in one piece.
- Open the chicken breasts flat and place a saran wrap over the meat.
- Pound the chicken breasts with a mallet to flatten to about ¼ inch thickness.
- Season with salt, pepper and garlic powder.
- Put a spoonful of cream cheese on the chicken breasts.
- Top with 2 slices of proscuitto, ¼ cup of dried tomatoes and 4 leaves of basilic.
- Roll the chicken breasts tightly.
- Tie with some kitchen twine.
- Start your smoker at 450°F.
- Cook the stuffed chicken breasts for about 10 minutes, turn over and cook for another 10 mins, on until you reach 160°F internal temperature.
