Pulled beef english muffins

Our family loves some english muffins breakfast every now and then.
We used to buy our bread in store but one day, I realized that it was so easy to just make our own english muffins.
It turned out that they’re resher and much tastier than the store bought ones.
Follow this recipe to learn how to make your own english muffins.

The great thing about owning a Cuisinart BBQ 360 XL griddle, it’s the perfect gear to bake my english muffins.
Only 4-5 minutes each sides, and you are in business.
I’ve topped mines with eggs and leftover pulled beef. Added a slice of cheddar, spread mayonnaise and added some BBQ sauce and it was a breakfast of anyone’s wildest dreams.

Equipment

  • 360 XL Griddle Outdoor Cooking Station (Cuisinart)

Ingredients
  

English muffins

  • 600 g flour
  • 15 g salt
  • 25 g sugar
  • 2 g active dry yeast
  • 45 g unsalted butter
  • 375 g warm water
  • ¼ cup semolina flour

Other ingredients

  • 2 tbsp olive oil
  • ¼ cup butter
  • 4 eggs
  • 4 cheddar cheese slices
  • 2 lbs shredded beef
  • ¼ cup mayonnaise
  • ¼ cup BBQ sauce

Instructions
 

English muffins dough

  • In a bowl, mix the sugar and the yeast in the warm water. Basically Yeast is activated in the water as I’m feeding it with sugar.
  • Wait 5-10 minutes untill you see some bubbles then add the flour , the salt and the melted butter.
  • Knead with your hands until the dough is homogeneous and non sticking.
  • Cover the bowl with a dish cloth and wait until the dough has doubled it's size.
  • Knead the dough and form a long tube of about 2 inches diameter.
  • Divide the dough into 12 round pieces.
  • kneed each pieces in balls and gently press your hand on top to form a thick round disc.
  • Cover a tray with semolina flour and place the dough pieces on top.
  • Cover the other side with more semolina flour.

Dough cooking

  • Start your griddle at medium heat.
  • Spread some oil on the hot plaque.
  • Cook the english muffins, for about 4-5 minutes, or until the bottom side is golden.
  • Turn over and do the same on the other side.

Assembling

  • Remove from the griddle and slice them open in halves.
  • Build your own english muffins with your favorite proteine or do like me.
  • I've cooked 4 eggs on the griddle at medium for 4 english muffins.
  • I've also used 2 lbs of precooked pulled beef, that i've reheated on the griddle.
  • Topped with cheddar slices, and spread mayonnaise on the bread.
  • Finally added some of my favorite BBQ sauce.
