BBQ Chichen Pizza on the griddle

Ingredients
  

Fast rise pizza crust

  • 1 ½ cup warm water
  • 2 tsp instant dry yeast
  • 4 tsp sugar
  • 4 cups all purpose flour
  • 2 tsp salt
  • 4 tsp olive oil

Toppings

  • 1 cup chicken breast cubed
  • ½ lbs bacon chopped
  • Cuisinart Bourbon Molasses seasonning
  • cup barbecue sauce Cuisinart Barrel Whiskey BBQ sauce
  • ¼ cup red onions diced
  • 1 ½ cup your favorite cheese We love a mix of mozzarella and Monterey Jack
  • 1 tbsp cilantro optional

Instructions
 

Pizza dough

  • In a medium size bowl, mix together the warm water, the yeast and the sugar.
  • Stir until the yeast and the sugar has dissolved.
  • Add the flour, the salt and the olive oil.
  • On a floured surface, gently knead the dough into a firm ball.
  • Add some oil in the bowl used previously, and place the dough in.
  • Cover with a damp towel and leave to rest for one hour at room temperature or until the dough has doubled in size.

Cooking

  • Turn your griddle on medium heat and oil the surface.
  • Add the chicken and the bacon on the griddle.
  • Season the chicken generously with the Cuisinart bourbon molasses seasonning.
  • Leave until the chicken and the bacon are fully cooked.
  • Set aside and put the griddle at low heat.
  • Cut the dough into 3 pieces.
  • Stretch each piece into a large oval or circle.
  • Brush one side with olive oil.
  • Cook one side of all three pizzas on direct heat with the lid over the griddle.
  • Raise the griddle temperature to high.
  • Turn the pizza dough and place it on a cooking rack on the griddle for indirect heat.
  • Spread some Cuisinart Barrel Whiskey BBQ sauce and top with chicken, bacon, onions, and cheese.
  • Put the lid over the griddle and cook the pizzas for about 10 minutes.
  • Remove from the griddle, add some more sauce and top with cilantro.
  • Serve hot and enjoy!
