Avocado chimichurry flank steak

Equipment

  • Cuisinart 360 XL griddle outdoor cooking station (or any other griddle)

Ingredients

  • 1 flank steak
  • 1 cup cilantro leaves packed
  • 1 cup parsley leaves packed
  • 2 tbsp garlic roughly chopped
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp sriracha sauce
  • ¼ cup red wine vinegar
  • ½ cup olive oil extra virgin
  • 1 avocado diced

Instructions

  • Mix all the avocado chimichurry ingredients together in a bowl
  • Brush the flank steak with some olive oil, salt and pepper
  • Start your griddle at high (We want a good brown crust so make sure your griddle is very hot before placing the flank steak on it)
  • Cook for about 5 minutes per sides
  • Let it rest for about 5 minutes and top with the avocado chimichurry sauce
