Avocado chimichurry flank steak

Equipment
- Cuisinart 360 XL griddle outdoor cooking station (or any other griddle)
Ingredients
- 1 flank steak
- 1 cup cilantro leaves packed
- 1 cup parsley leaves packed
- 2 tbsp garlic roughly chopped
- ½ tsp kosher salt
- ½ tsp black pepper
- 1 tsp sriracha sauce
- ¼ cup red wine vinegar
- ½ cup olive oil extra virgin
- 1 avocado diced
Instructions
- Mix all the avocado chimichurry ingredients together in a bowl
- Brush the flank steak with some olive oil, salt and pepper
- Start your griddle at high (We want a good brown crust so make sure your griddle is very hot before placing the flank steak on it)
- Cook for about 5 minutes per sides
- Let it rest for about 5 minutes and top with the avocado chimichurry sauce
