Leftover Smoked Brisket Chili
My go to bowl of comfort food.
Servings: 6
Ingredients
- 2 pound leftover brisket cut into small cubes or shredded
 - 2 large red onion chopped
 - 1 tbsp olive oil
 - 1 medium red bell pepper chopped
 - 3 cloves garlic minced
 - 1 28onz can tomatoes diced
 - 1 15onz can kidney beans drained
 - 1 15onz can tomato sauce drained
 - 1 15onz can black beans drained
 - 1 15onz can corn drained
 - 1 4onz can green chili diced
 - 1 cup red wine
 - ½ cup coffee
 
Seasoning
- 2 tbsp chili powder
 - 1 tbsp ground cumin
 - 2 tsp onion powder
 - 2 tsp garlic powder
 - 1 tbsp maple syrup or brown sugar
 - 1 tbsp smoked paprika
 - 1 tsp salt
 - 1 tsp pepper
 
Instructions
- In a large pot, heat the olive oil over medium heat.
 - add the diced onions and bell peppers and cook until the onions are translucent.
 - Add in the garlic and cook for another 2 minutes.
 - Add the brisket, along with the tomatoes, dry seasonings, and maple syrup.
 - Stir gently until the mixture is well combined.
 - Add the wine and allow it to deglaze the pot and cook off the alcohol. It should take about 2 minutes.
 - Add, coffee, tomatoes, beans, green chili, and corn. Stir until well combined.
 - Let this simmer on low heat for at least an hour, mixing occasionally.
 - Serve with shredded cheese, sour cream and green onions.
