In a large pot, heat the olive oil over medium heat.
add the diced onions and bell peppers and cook until the onions are translucent.
Add in the garlic and cook for another 2 minutes.
Add the brisket, along with the tomatoes, dry seasonings, and maple syrup.
Stir gently until the mixture is well combined.
Add the wine and allow it to deglaze the pot and cook off the alcohol. It should take about 2 minutes.
Add, coffee, tomatoes, beans, green chili, and corn. Stir until well combined.
Let this simmer on low heat for at least an hour, mixing occasionally.
Serve with shredded cheese, sour cream and green onions.
