Mix all the stuffing ingredients together in a bowl
Lay 2 duck breasts side-to-side, fat down on three cooking string
Coat with a generous amound of straberry stuffing in the middle of the two breasts, leaving about ½" on both edges.
Lay the third breast on top, fat side up
Tie the breasts with the 3 strings, forming a roast shape
Smoke at 225°F for 3-4 hours or until duck breasts reached an internal temperature of 160°F
