Start the griddle at medium heat.
Oil the cooking surface with olive oil.
Lay the pepperonni slices on the griddle, on a surface that is approximately the size of the tortillas or the pita.
Top the pepperoni slices with mozarella cheese.
Lay a tortillas or a pita on top of the cheese.
Cook for about 3 minutes, then flip it over.
Cook for another 3 minutes.
Remove from the griddle and season with salt and pepper.
Cut in triangle pieces and garnish with fresh basil.
Use a tomato and basil sauce for dipping.
