Slice open the chicken breasts, cutting with the knife parrallel to the cutting board. Stop cutting toward the end, to leave the breast attached in one piece.
Open the chicken breasts flat and place a saran wrap over the meat.
Pound the chicken breasts with a mallet to flatten to about ¼ inch thickness.
Season with salt, pepper and garlic powder.
Put a spoonful of cream cheese on the chicken breasts.
Top with 2 slices of proscuitto, ¼ cup of dried tomatoes and 4 leaves of basilic.
Roll the chicken breasts tightly.
Tie with some kitchen twine.
Start your smoker at 450°F.
Cook the stuffed chicken breasts for about 10 minutes, turn over and cook for another 10 mins, on until you reach 160°F internal temperature.
