Breakfast poutine on the griddle

Servings: 2 people

Equipment

  • Cuisinart 360 XL griddle, or any other griddle
  • Sauce pan
  • Spatula
  • Cutting board

Ingredients

  • 2 large potatoes
  • 1 red onion
  • 3 tbsp olive oil
  • ½ red pepper
  • 1 cup bacon sliced
  • 1 cup breakfast sausages
  • 1 cup fresh cheese curds
  • 2 eggs
  • 2 green onions

Hollandaise sauce

  • 5 egg yolks
  • 1 cup butter
  • 1 lemon juiced

Instructions

  • Start your griddle at high and fill a saucepan with 2/3 of water
  • Cut the potatoes in cubes, medium size
  • Parboil the potatoes in the hot water for about 10 minutes
  • Drain and place in a large bowl
  • Cut the red onion in small slices and toss with the potatoes and 1 tbsp of olive oil
  • Drizzle 1 tbsp of olive oil on the griddle and toss the potatoes.
  • While the potatoes are cooking, put the bacon and sausages on the griddle.
  • Fill the saucepan with about 1/4 of water, put on the griddle and place a large stainless steel bowl on top of the saucepan
  • Squeeze the lemon juice in the bowl, add the 5 eggs yolks and pour the melted butter slowly while whisking. Whisk until you get a thick homogeneous sauce. Remove from the griddle once ready.
  • Turn the potatoes, the sausages and the bacon every 5 minutes, until all cooked.
  • When everything is almost ready, crack 2 eggs and add the pepper on the griddle.
  • Assemble your breakfast poutine, starting with the potatoes, the meat, pepper, cheese, eggs, hollandaise sauce and chopped green onions on top.
