Hot & Fast Smoked Baby Back Ribs

Equipment
- NOMAD Grill & Smoker
- Charcoal
- Maple wood chips
- You can use any other charcoal grill to make this recipe
Ingredients
- 2 racks baby back ribs
- 1 cup BBQ sauce your favorite sweet and thick bbq sauce
- ½ cup apple cider vinegar
Kids friendly dry rub
- ¾ cup brown sugar
- ¼ cup paprika
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tsp black pepper
- 1 tsp salt
Instructions
- Mix all the dry rub ingredients together.
- Season the ribs on both sides generously.
- Load your charcoal into your chimney and fire it up.
- Once the charcoal is ready, drop it off under the grate, add a few maple wood chips and close the lid with opened vent. The target temperature on your grill should be 325°F.
- Place the ribs on the grates, meat side up, and close the lid ASAP as you don't want to give the flames too much air.
- Mix apple cider vinegar and water together in a food safe spray bottle.
- After about one hour, flip the racks to meat side down. Check them every 10 minutes and spray some apple vinegar to keep them moist.
- Once they have a good looking color and tenderness; brush both sides and grill for another 5 minutes.
