Fajitas steak roll-ups
How about kicking off a summer fiesta with some fajitas steak roll-ups? I bet you will enjoy this alternative hack to the traditional Mexican dish. These were seared and smoked on my Clermont Pellet grill and smoker for a super moist and tasty ending.

Fajitas steak rolls
Equipment
- Cuisinart Clermont Pellet Grill & Smoker
- Or any grill of your choice
- Cast iron skillet
- Cutting board
- Sharp knife
- Kitchen twine
Ingredients
- 2 pounds round roast thinly sliced
- 1 tbsp olive oil
- 8 slices monterey jack cheese
- 1 large white onion sliced
- 1 red bellpepper sliced
- 1 green bellpepper sliced
- 2 lime cut into wedges
- 1 cup salsa your favorite or homemade
- 1 cup sour cream
- ¼ cup cilantro fresh
- ¼ cup green onions chopped
Fajitas seasonning mix
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp cumin ground
- 1 tsp oregano dried
- salt & pepper to taste
Guacamole
- 2 avocadoes ripped
- 2 tbsp lime juice freshly squeezed
- 1 green onion thinly minced
- ¼ cup tomatoes finely diced
- salt and pepper to taste
Instructions
Cooking the veggies
- Turn your BBQ on for direct grilling at 450°F.
- In a large cast-iron skillet, heat 1 tbsp of olive oil.
- Toss the onions and bell peppers in the skillet.
- Season with salt and pepper.
- Cook for about 5 minutes or until the veggies are tender.
- Set aside in a bowl.
Roll-ups preparation
- Mix all the rub ingredients in a spices shaker.
- Place the steak slices flat on a large cutting board.
- Sprinkle the rub all over the steak slices. Apply only on the interior face of the roll-ups. We don't want burned up seasonning on the outside.
- Place a slice of monterey jack cheese on each steak slices. Place it where you will start to roll up your steak fajitas.
- Place some veggies on top of the cheese.
- With your hands, tightly roll-up the steak slices.
- Tie with a small kitchen twine.
Steak fajitas grilling
- Turn your Grill at 450°F.
- When the grilling grates are hot, place the roll-ups on the grill.
- Close the lid, and cook for about 3-4 minutes.
- Open the lid and turn the roll-ups over.
- Close the lid again and cook for another 3-4 minutes.
- Remove from the grill.
- Serve with a fresh salsa, homemade guacamole and sour cream.
- Sprinkle with fresh cilantro and green onions.
- Press some lime juice on top.
