Elote – Grilled Mexican Street Corn
Ingredients
- 12 corn on the cob
- 2 tbsp oil vegetable
- ¾ cup sure cream
- 5 tbsp mayonnaise
- 1 cup feta cheese crumbled
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp salt kosher
- lime wedges
- cilantro minced, to taste
Instructions
- Start by heating your grill to medium-high.
- Pull the husks back from the corn and use string to tie the leaves together
- Brush some oil on each corn cob evenly.
- Place the corn directly on a heated grill rack and make sure to turn them every couple minutes for a total of 20-30 minutes or until it begins to blacken.
- In a small bowl, mix the sour cream, mayonnaise, feta cheese, kosher salt, chili, and garlic powder
- Once they are fully cooked, place the cors on a flat surface and use a baking brush to coat it with the mixture.
- Garnish with a squeeze of lime and Cilantro.
