Extra smashed Onion & cheese burger
Onions and beef goes together like rock and roll.
My secret to the best burger ever? Cheese, cheese and more cheese! Cheddar, Mozzarella and Curd cheese it is!
So let’s rock some onion smashed burgers on a cast iron griddle and roll this up with Swiss, Cheddar and fresh Cheese Curds right from Québec.
Before you go, make sure you grill your burger like you grill a steak. The griddle have to be screaming hot before adding the meat. That way, you’ll have a serious caramelization, resulting in an amazing crust. It’s all about the The Maillard reaction.

Servings: 2 People
Equipment
- An heavy spatula or a grill press
- A Cast Iron Griddle or large Skillet
Ingredients
- 1 tbsp Vegetable oil
- 1 pound Ground beef
- 1 tsp Kosher salt
- 1 tsp Ground pepper
- 2 slice Mozzarella cheese
- 2 slice Cheddar cheese
- 200 g Cheese curd
- 6 slice bacon
- 1 large White onion
- 4 pieces leaf lettuce
- 2 white hamburger buns
- 1/2 cup mayonnaise
Instructions
- Heat a cast-iron griddle or large heavy skillet over medium-high until it gets very hot. It usually takes about 2 minutes
- Lightly brush with vegetable oil
- Divide ground beef into 4 equal portions and shape them into a ball
- Slice the onion. Make sure your slices are very thin.
- Place the ball of meat and bacon on the oiled Cast Iron
- Add sliced onions on the patties
- Smash the burger with your grill press or spatula
- Season with salt and pepper then cook,until outer edges are brown
- Flip the slice of bacon and patties. Then season with more salt & pepper.
- Place one slice of Mozzarella cheese and one slice of Cheddar cheese on the burger. Cook until the cheese droops
- Serve with a soft warm bun, stack 2 patties together, add a lots of mayonnaise, and whatever over toppings you want. Don't forget the bacon and of course... the Cheese Curds!!
