Melt the butter and add the garlic, the chives and the parsley.
With a pair of kitchen scissors, cup the top shell in a straight line in the center of the lobster tails. Stop at the base of the tail
Flip the tail and crack the ribs in the middle of the tail's bottom.
Flip the tail and carefully open the shell with your thumbs and lift the lobster meat up, leaving the base of the tail attached.
Close the shell underneath the meat. The lobster should sit on top of it's shell.
Spread the butter on top of the lobster tails
Place some lemons cut in halves on the grill
Turn your smoker on at 225°F, place the lobsters directly on the grill and cook for about 1 hour
Drizzle some hot lemon juice over the tails while they are smoking
Serve hot with extra melted garlic butter and tobiko on top of the lobster
