In a very hot skillet, cook the slices of bacon.
Once cooked, remove from the skillet, leaving the bacon fat in.
Add the chopped onion, cook and stir for about one minute or until the onions becomes translucid.
Add the corn, the sugar, the salt and the pepper and stir for another minute.
Add the cooked bacon and cook for another 2 minutes.
Remove from the grill and garnish with fresh scallions.
