Mix the warm milk, the sugar, and the yeast and stir. Leave for about 5 minutes until the yeast starts to bubble.
All the water, eggs, flour, and salt then start your mixer at medium speed for about 20 minutes.
The dough will be very sticky. Add a little bit of flour on top and remove it from your bowl.
Knead the dough for about 5 minutes, the dough will become elastic and smooth.
Lightly oil the sides of your bowl and drop the dough in then cover with a damped cloth. Leave at room temperature for about 1 hour or until the dough has doubled in size.
Cut the dough into 8 pieces and form tights balls. Place the balls on a parchment paper and cover with a damped cloth for about 30 minutes at room temperature. The balls will increase in size by about half the size.
Preheat the grill to 400F. Feel free to use your indoor oven.
Let's do the egg wash and whisk the egg yolk with one tsp of milk (you can also use cream or water). Remove the cloth, and brush the egg yolk over each bun, sprinkle sesame seeds (optional).
Bake for about 10-15 minutes or until golden. Remove the buns and let them cool on a cooling rack.
