Pepperoni Pizza-Wings

Pepperoni Pizza-Wings
Equipment
- Meat thermometer
- Griddle cooker
- Cast iron skillet
- Wood fired oven
Ingredients
- 5 lbs chicken wings
- 3 tbsp oil canola
- 1/2 tbsp pepper
- 1/2 tbsp salt
- 2 cup mozzarella grated
- 1 cup pepperoni sliced
- 3 tbsp BBQ sauce
Instructions
- Preheat your griddle at medium to medium-high heat. Avoid high heat, which can burn the skin before the insides cook thoroughly.
- Brush the griddle lightly with canola oil to prevent sticking.
- Place the chicken wings on your griddle. Make sure to leave a small space between each piece so they cook evenly.
- Season your chicken wings with salt and pepper.
- Cook your chicken wings for about 20 minutes, turning with tongs every couple minutes to ensure even cooking and prevent burning.
- Insert your meat thermometer in the thickest part of the meat and remove the wings when they reach an internal temperature of 165 degrees Fahrenheit.
- Place the wings vertically next to the edge of your skillet to hold them in place then fill the pan.
- Cover all your wings with grated mozzarella cheese.
- Cook in your wood fired oven for about 3 minutes or until the cheese have melt evenly. Any oven or barbecue works fine too. Topped with BBQ sauce and enjoy!
