Bourbon & Blueberry Jerky

Ingredients
  

  • 4 lbs top round beef
  • 1 cup Bourbon
  • 2 cup blueberries
  • 1 can chipotle en adobo
  • 1/2 cup apple cider vinegar
  • 1/3 cup Worcestershire sauce
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp black pepper
  • 1/3 cup brown sugar
  • 1 tbsp kosher salt

Instructions
 

  • Cut off all visible fat on the beef and place in the freezer for about an half an hour to partially freeze. It will be a lot easier to slice.
  • While the meat is in the freezer, put all the ingredients together in a blender and blend until it is fully mixed.
  • Remove the beef from the freezer and slice thinly against the grain into thin strips, 1/4 or thinner if you can.
  • Transfer the marinade in a Ziploc bag or a large bowl and add the sliced beef.
  • Cover and marinate for 24 hours in the refrigerator.
  • After the meat has finished marinating, remove all the beef from his container and pat dry with paper towels.
  • Set and heat your smoker temperature to 180℉. You can add any type of wood flavors. On my side i used apple wood chips. You can also use any electric smoker or the A-MAZE-N Pellet Smoking Tray is great too.
  • The jerky is finished when it bends and starts to crack. Be careful to not overcook it, you don’t
    want the beef jerky to break in half. You should be able to see white fibers when it is ready to enjoy.
