Fill your hopper of hickory pellets and preheat your pellet grill to 225°F.
Add the black pepper, cayenne pepper, red pepper flakes, and brown sugar in a small bowl and mix well.
Lay the slices of bacon on a wire rack. Make sure they are flat and not touching each other.
Brush both sides of the bacon with maple syrup, then sprinkle each piece with the seasoning.
Place the rack on your grill grates and close the lid. Smoke for about 1 hour and brush with the rest of the maple syrup.
Smoke for another hour or until desired crispness is reached.
You can serve the bacon warm or at room temperature. Enjoy!
